Keeping chilled and frozen goods within a safe temperature range from depot to doorstep isn't optional — here's what UK food hygiene law expects, what ATP certification actually covers, and how to keep records that hold up if something goes wrong.

What cold chain compliance actually means

"Cold chain" describes the unbroken sequence of temperature control that keeps a perishable product safe from the moment it's produced or picked, through storage and transport, to the point it reaches the end customer. For a delivery fleet, the transport leg is the part directly under the operator's control, and UK food hygiene law — chiefly Regulation (EC) 852/2004 as retained in UK law, alongside domestic food hygiene regulations — requires food business operators to identify and manage hazards through a HACCP-based approach. Record-keeping and retention

At minimum, operators should be keeping temperature logs for every journey, maintenance and calibration records for refrigeration units, and evidence that drivers have been trained on cold chain procedures. Handling a temperature excursion properly

Every cold chain operation needs a written procedure for what happens when a load moves outside its safe temperature range mid-journey — who the driver contacts, whether the delivery can proceed or needs to be diverted, and exactly how the incident is documented. Speed and documentation matter more than a perfect outcome: a promptly reported and properly recorded excursion is a manageable compliance event, while an excursion that goes unnoticed until a customer complaint arrives is a much bigger problem, both for food safety and for the operator's standing with clients and regulators. This is a training issue as much as a technology one — drivers need a specific, rehearsed procedure to follow, not a general instruction to keep an eye on things.

Cold chain compliance sits on top of standard fleet compliance, not instead of it — a refrigerated vehicle still needs the same DVSA roadworthiness and walkaround checks as any other commercial vehicle, alongside its temperature-specific requirements.
